Phyllis Theroux’s Best Soup in the World

When I read Phyllis Theroux’s wonderful memoir The Journal Keeper I became such a fan I got in touch with her. We discovered we had some mutual friends and began writing back and forth. When I got the idea for this blog I asked her for an easy recipe and she sent me “The Best Soup in the World.” All I can say is that I made it three times in one week.  The ingredients are strange, but trust me, it’s delicious.

1 large Granny Smith apple, peeled and chopped

1 large potato, peeled and chopped

1 not too ripe banana

1 pint of chicken broth (I’ve also made it with vegetable broth which works)

1 cup cream or half & half

1 Tbs. butter

1 rounded Tbs. curry powder

Salt to taste

Simmer vegetables and fruit in broth in a three quart sauce pan covered until soft (about 12 minutes). Stir in butter, cream, curry and salt until hot, but not boiling. Puree in a blender, sprinkle with chives and serve hot or cold.  (Serves 4-6)

    I’m having a small soup party this weekend and just might try this along with a chicken noodle! It sounds so interesting —
