A Movable Feast: the gift of food

There have been no posts for awhile on this blog because R. is ill  so we’re not cooking for friends or going out to dinner. But the other night my friend Kara announced she was bringing a small dinner party to us to celebrate our friend Rob’s birthday.  She arrived with Rob and a complete dinner of frittata, salad, zucchini and fruit. It was a dinner so delicious and transportable that I want to share it with you. (We were all so hungry that I forgot to take pictures – but will add them when I cook this dinner myself.) What a gift it was.

Here are the recipes in Kara’s own words:

The frittata: 10 eggs whisked with 1/2 cup milk, 1 cup ricotta cheese, 2 cups grated cheese, mexican cheese mix is what i use, salt and pepper to taste. mix in 1 onion, sautéed in butter, 2 cups sliced mushrooms, sautéed, in butter, 8 oz. frozen drained spinach.  pour in buttered baking dish. sprinkle with grated parmesan cheese. 350 for 40 minutes or till top is browned.  note: you can add cut up sun dried tomatoes for color and flavor.

zucchini…cut in half. brush with  flavored olive oil…i used an oriental oil i bought at the farmer’s market in brentwood…place on greased baking sheet. 350 for 45 minutes or till browned. you can sprinkle with parmesan cheese or any seasoning you like.
the salad comes in a bag with the dressing…i get it at costco. it has sliced brussels sprouts, kale and other healthy greens mixed with dried cherries and a poppy seed dressing. they have it in the refrigerated vegetable/fruit section. i add mandarin oranges, dried cranberries, a little blood orange flavored olive oil and black currant balsamic vinegar and avocado.
